Did you celebrate National Chocolate Cake Day?

Yesterday, after a beautiful nap (punctuated by the most perfect soundtrack), I woke remembering

three things.

1. It was National Chocolate Cake Day
2. It was Family Literacy Day
3. I really love naps

So I did what any sane person would do. I decided to bake a chocolate cake.

I have a great chocolate cake recipe but since my husband had previously declared it 'unnecessary' to bake a cake for National Chocolate Cake Day, I decided to find a different recipe to try because I like new things. I Googled "Easy one bowl chocolate cake" and honestly tried the first one on the list. It had good reviews, it was easy and went together quickly. I did two 9" round pans -  it seemed like it should be different (than what I usually do) so I could pay proper homage to the Chocolate Gods.

Twenty minutes later it was in the oven. Thirty five minutes later, it was out of the oven. After brief consultation with my sister about the appropriateness of a filling, I whipped one up, made the frosting and waiting for the cake to cool.

After piano class, it was time to eat that decadent piece of awesome.

And awesome it was. It has been said I have a flair for the dramatic but I summed the cake eating experience like this: It is like a giant slice of sex, heaven and good wine rolled into one, chocolate laden piece of gold.

Click the link to discover the Magic Sex Cake recipe. For my filling I combined 1/2 an instant pudding cup with about 2-3 ounces of plain cream cheese. I then made my 'usual' frosting, which goes like this:

Creamy Frosting
3 tbsp margarine
3 tbsp cocoa
1-1/2 cups icing sugar
3 tbsp cream

I baked the cake in two, parchment lined pans. I spread the filling on one half, topped with cake and smothered that bad boy in my creamy frosting. I refrigerated it because it seemed like a good idea. It was and it is still moist and delicious.

I'll also add two final thoughts. Although i make chocolate cake all the time, I rarely eat it. This cake, however, is all I want to eat. Maybe it's PMS, maybe it's a full moon, but I can tell you although I already had my slice (two, who am I kidding? Lunch needed dessert today too), I am seriously considering doing extra time on the elliptical so I can eat more of that wondrous creation.

My final thought is this - my husband, the King of All Things Chocolate was 'meh' about the cake. He thought it was 'heavy' and although he hasn't turned down a piece, he said he still prefers my other recipe.

He is wrong, but I love him and I will still make him his favourite.

Menu Plan Monday: January 25 to February 1, 2015

I'm hoping to share them more frequently than I have been. Considering I started this a year ago, I sure haven't been writing about it!

Menu Planning: How it got me two marriage proposals and saved me 30%!

Recently, I finished a year's worth of meal plans. That's right, folks, I have 52 weeks or 365 dinners planned. I am RELIEVED. It's a huge weight off my shoulders. While I enjoy cooking, I do not enjoy meal planning.

The results of my labour of love? Two marriage proposals, a few (indecent) solicitations for copies of my menus and oh, an annual savings of 30% - (this includes our grocery and our dining out budget)!

When I thought about how and what we eat, it became clear that we have several "family favourites" and those meals are repeated frequently but we also like variety so I'm always trying new things (like "It Looked Pinteresting" - a collection of new meals curated from Pinterest).  When trying new recipes, there are always winners and some BIG losers. I've done two 'big cooks' with friends so there will be meals that won't be repeated (like "Coconut Thai Chicken") and although I love the idea and will likely repeat a 'big cook', the recipes from the books we used were frequently bland and tasteless.

My meal plans have areas to add new recipes and the plans, being organized by month, are also seasonal (we don't BBQ in November, for example). Additionally, our meal plans have a less than every six week repeat (meaning, save for "Taco Tuesday" on piano day, we don't eat the same meal more than once every six weeks), more often, it's more like eight weeks between repeats. Some meals never repeat and sometimes we have theme nights like "Meatball Monday's". Dinners out are pre-planned based on the month's activities (piano recitals, birthdays & anniversaries are 'given' dining out events).

All that said, the biggest reason I started the annual meal plan is to save money. Food is expensive - no matter where you live. With milk approaching $5 for 2 litres and peppers at $3.99 pound, meal planning allows me to buy what we need and reduces waste because I know what I need before I go to the store to shop. It is convenient and allows me to plan healthy and balanced meals. It also reduces our impulse to order in because we know what's for dinner!

As I said before, we managed to save 30% on our annual food budget since I commenced the monthly menu planning in February 2014. By having a clear plan, with scheduled dining out events, much more organized shopping trips (and grocery lists) and with no "what's for dinner tonight" questions bringing about impulse shopping trips, has helped our bottom line immensely.

While 30% is a huge sum of money, I hope to shave an additional 20% this year.  Recently, a friend asked how do I know that I want what's planned for November 17 (which was meatballs & gravy)? Knowing my meals are pre-planned and the shopping is complete, I have seven meals to chose from on any given night. By now having it all organized before the beginning of the next month, I am able to take advantage of the store loyalty discounts that happen the first Tuesday of the month. Which, starting this month, meant that I was able to stock up on all the staples required for the month so I, in essence, have 30 meals to chose from this month. I am also watching store sales more carefully and stocking up on staples we use frequently. Just this past week, I bought three pounds of our usual coffee - because it was $5.92 cheaper per pound than it usually is!

We still impulsively order dinner and we don't always eat what's planned but I have a plan for that too - I carry the meals forward to another evening and ensure we don't dine out too often if there has been impulse meals out. I can tell you doing a 'big cook'  is like having take-out in your own house. It is something I will do again because the convenience of it can't be beat.

Since I first started planning meals way back in 1995, I've finally found a method that works for me. I've tried many different ways of planning but the annual plan totally suits me and provides the flexibility we need.

It may not work for everyone and it may take time to find your groove, but after many years (and many failed attempts), I've finally figured it out and I never have to think (about cooking) again!

Recipe Share: Vegetarian Salad Rolls

A while ago, I found this recipe on the eggs.ca website and I thought they would be tasty. During my next month's menu plan, I added it for dinner, intending to serve it with an Asian inspired chicken. I purchased the vermicelli noodles and rice wrappers and promptly forgot where I found the recipe.

Fast forward a bit and I asked my friends on Facebook. Naturally, they came through with suggestions. I combined the suggestions, deleted a few things, added a couple more and came up with my own recipe.

Here's what I did!

Vegetarian Salad Rolls

1-1/4 mini cucumbers – cut into matchstick size pieces
6-8 baby peeled carrots – cut into matchstick size pieces
1/2 – 3/4 cup bean sprouts
1/2 yellow pepper sliced thin and cut length wise
3 green peppers, sliced thinly
1 to 1-1/2 cup cooked rice vermicelli noodles
1 – 2 tbsp fresh ginger (grated from frozen)
1-2 cloves of garlic, minced

2 caps, full, soya sauce

14 round, rice paper wrappers

Toss all ingredients (except for wrappers) in a glass bowl. Soak rice paper liners (one at a time) in hot water (30 seconds or until soft). Place on clean tea towel. Add filling (at one end) and fold sides in and roll.

Place seam side down on parchment paper, cover with plastic wrap and chill until ready to eat.

We served them with spicy Thai chili sauce but a good peanut sauce would be nice too. I think one could add shrimp and my son said that the Teriyaki chicken I served with it would have been awesome inside the rolls.

Menu Plan Monday: September 1, 2014

This is my first MPM post in months... I've been planning though! I have monthly menus dating back to February 2014 and my hope is to have the next four months planned by the end of October. I'm SO happy! No more dreading meal planning each week/month. I'm so close to have a full year of menus I can't wait!





Do I worry about boredom? NOPE. I've got theme nights and a plan to replace key meals each month to keep things 'interesting'. I can't begin to tell you how excited I am about this!

Without further blabbing, here it is. I've noted the month's themes too so you can see just how clever I am! My recipe for the Crunchy Chicken is at the bottom of the post.

PS Here is the recipe for my crunchy chicken. I kind of created this and my first run was TOO salty so I expect I'll play with it and seriously reduce the amount of season salt!

Crunchy Chicken

3 or 4 chicken breasts

3 cups corn flake cereal
1 tsp season salt (originally, I used two)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp oregano
1/4 tsp pepper

~place all in a large zippered bag. Roll and crush with a rolling pin.
~set aside

1/2 cup mayonaise
2 tbsp water
~place in a bowl and stir to combine
~set aside


1/2 to 3/4  Flour
sprinkle of: pepper, table salt, basil

~place flour and spices in a shallow plate and stir.
~set aside

1 egg
1 tsp water
~combine egg and water in a bow and beat to combine
~set aside

1. Wash & dry chicken.
2. Dip chicken piece in egg and water, then dredge in flour mixture.
3. Dip again in mayo mixture and dredge well in corn flake mixture.
4. Place on parchment paper and bake at 400F preheated oven for 35 minutes (or until cooked through).

40x40 Update: Day 25 - Meal Planning (in my defense)

My goal was to plan (at first) six months ahead - then I said three and finally settled on two months. I accepted that I need to accommodate what I could realistically complete. I've got the rest of June, all of July and August done and it feels amazing!

I've been teased for years about my meal planning and when sharing my Day 25 40x40 challenge on Facebook, my sweet sister started teasing me about it and it was her goal to teach me a few things about living life instead of planning meals. It got me thinking - why do I meal plan?

Reaching way back in my memory, I recall the first time I started planning meals. I was working as an order-picker in a sewing supply warehouse. Although I liked the job, it was dreadfully mundane and sometimes I needed something to pass time while I was wandering the isles picking orders. It was usually the same thing week after week but it killed five minutes.

Later on, it evolved to planning when my husband worked out of town. I again ate the same thing Monday to Thursday, week after week, but always tried to plan different things when he was home.

When I went back to work after our son was born, it had to happen. I was gone from the house 7am until 4:30pm and my husband didn't cook so I had to make sure he knew what to make for breakfast and lunch plus, I needed to be able to spend as much time with my baby as possible when I got home from work.

Planning further ahead (like I've been doing since February) works so much better for me for a few reasons...

1. Planning ahead helps me save money.
2. It takes the guess-work out of dinner.
3. Aids me in planning more nutritious meals.
4. Gives me more time with family.
5. Helps me stay on budget for our 'dining out' budget and our grocery budget.
6. Reduces my stress level because I'm not worrying about it.
7. Ensures I have several meal choices on hand (in case we don't feel like what's on the menu that day).
8. Once I get another five months planned, other than tweaking it and rotating in new meal choices, I won't have to worry what's for dinner for a good long time to come!
9. Less time in the kitchen!
10. During the school year, we have commitments on at least one night a week, knowing what's for dinner means we can eat and get out the door on time and I don't turn into Momzilla.

And those, friends, are just off the top of my head. If I thought a little more, I'd likely come up with 10 more!

Everyone is different - some of us plan, some of us don't. I say do what works for you and be happy. Life is too short to worry about what others are doing but if I had to give anyone a piece of advice, it would be to try menu planning - you might just like it!

Menu Plan Monday and Pumpkin! (Oct 12-18, 2013)

I've been planning, just not posting. :) Because life, you know?

Saturday: Take out
Sunday: Turkey dinner @ my parents
Monday: Pepperoni pizza macaroni and cheese (if you're a kid or have kids, this will be awesome - for the 'over 10' crowd, it's eatable)
Tuesday: Favourite Tuna Casserole
Wednesday: Hamburger soup and buns
Thursday: Chicken and mushroom linguine
Friday: Oven BBQ pork chops and oven roasted potatoes

Since school started, I've had the privilege of taking TroubleMaker each morning. This has afforded me the chance to meet some really nice Moms. One of which, I accidentally stalked a couple weeks ago. She was chatting, I was chatting, and she made mention that she lived "across from the toboggan hill". While picking TroubleMaker up from the sitter's one afternoon, I told him I figured out where his friend from school lived. He asked to drive past, we did.

Imagine my surprise when they were out in their front yard. I gave the awkward wave and stopped (because by that time, I was committed). We chatted for twenty minutes or so while the kids played. I admitted I was kind of stalking her and she told me she had tried to stalk me too. I realized then we'd be good friends.

Anyway, after several failed attempts to friend each other on Facebook (she couldn't remember my first name and there are 82 people with her name), we connected and I invited TroubleMaker and I over for a play date. That day is tomorrow.

Being the awesome person I am, I offered to bring muffins (pumpkin or carrot). She picked pumpkin and since my first attempt at p'muffins were awful, I decided to spring a new recipe from the vault. Being me, it also meant I had to try it before to make sure it was awesome and it also meant I'd do a bunch of stuff to make it more awesome and then I'd forget what I did.




Enter - "Better Than Starbucks Pumpkin Muffins" by Dinner with Julie! They are really good and they cooked up beautifully!

I did not do the sugar topping nor did I do the cream cheese filling (it kind of squicked me out). I also skipped the pumpkin pie spice and opted for (approximately) the following:

3 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
pinch (small) allspice

Also, which I think made these a 'winner', I used brown sugar in place of the white. I did this because I ran out of white sugar while making brownies and because I thought it might be "more fall" to use brown sugar since it has a richer flavour. I also used a touch more oil (a tablespoon or two) because the batter struck me as being a bit dry. The end result is great - crisp on the outside, moist and tender on the inside. I hope they go over well! PS I had another one after my workout this morning and HOLY COW, I could eat the entire batch!

Menu Plan Monday - September 28 to October 4, 2013

Last weeks menu changed. I forgot my husband was having some dental work done. This didn't phase me, though. It meant SOUP! I love soup. He isn't a huge fan, however, with a sore mouth, he was good with my choices! I got to make two of my three favourites! Baked Potato and Leek (with bacon and cheese) and Peppery Corn Chowder (weird, they changed the name of it - PS I never use evap milk, just regular old 1%). The best part? Leftovers! Yippee! I also "invented" my own version of Boston Pizza's "Bandera Bread". My son loves that stuff - mine really wasn't anything like BP's, but TroubleMaker loved it and ate nearly half of the thing himself..

This week we're in soft food mode, although he's anxious for ham (we spent all day today (Sunday) picnicking and taking pictures in the country so I didn't make it yesterday)!

Monday: Mom's crockpot ham and scalloped potatoes

Wednesday: Breakfast burritos

Menu Plan Monday - September 15 to 21, 2013

Menu planning - it is a 'must' in our house. Since my last MPM, I haven't had a 'formal' plan in place.

And it's been terrible. We also hadn't done a grocery shop in a whole bunch of weeks either (because I didn't have a plan) so it was picking the bitter dregs to in order to make something to eat. Thankfully, my family is very patient and not too picky so we managed, but I felt in constant chaos. I'm disorganized enough, food (for the most part), is the one area I'm usually organized! Without organized menus and food sure made life terribly difficult.

I can control the menu and the planning so I am (once again) climbing back on the bus to try to bring zen to my chaos! When I created our initial recipe selection criteria, things were much different for me and my family.

Now, food prep is an issue so I need simple prep (not much chopping, slicing or dicing), easy cooking (stirring is painful) and unfortunately, I've had to employ the use of prepared foods where I can. Thankfully, however, our diets are better controlled so although I still want to keep the lower sodium and sugar, our efforts of introducing more fruits and vegetables (and exercising regularly) is working for us.

Without further adieu, here is what we're eating this week!

Menu Plan Monday: August 24 to 30, 2013

After a couple of weeks off, I've started planning again. Also - I realized that planning saved us around $80 this week. Although I usually have an idea of what I'll be cooking, having a concrete plan took my bill from an usual average of $250 down to $180! That's substantial, I think!

Saturday: Homemade hamburgers
Sunday: birthday bbq @ the neighbours
Monday: Easy chicken and broccoli
Tuesday: Crock pot Ribs, baked potatoes and marinated vegetables
Wednesday: Fettuccine Alfredo with Caesar Salad

Friday: White Chicken Enchiladas with green chili sauce

Menu Plan Monday: July 28 to August 3, 2013

Can someone please explain to me just HOW we got to the end of July? It's AUGUST on Thursday, that means we're only a month or two away from snow?!?!?

Family Picnic: 2003 (I'm not in the picture, so stop looking)
Every August Long Weekend since +/- 1948, my Dad's family got together for a barbecue. That weekend is my Dad's birthday (August 4) - I think it was an Aunt's birthday too... His immediate family always got together with the extended family (on my paternal grandfather's side, there were nine children) and celebrated. Being the good French Roman Catholic family that they were, you can begin to imagine the magnitude of this event... Anyway, up until a decade or so ago, the tradition carried on. As the 'first' generation got too old, some of the second tried to continue the tradition (but weren't particularly successful) and a few years ago, my brother and cousin tried but it's all but died now (we're the third generation).

However, I still like to celebrate my Dad's birthday so we've done a couple family bbq's since. I think the last one was when Dad turned 65 (sorry Dad) and that was two years ago so it seemed like it was time again. This time, unlike Dad's 65th, I gave my siblings a choice. :) Did I mention I'm the bossy one?

I can't begin to tell you how much I'm looking forward to chicken and ribs

Sunday: Lasagna (the one I was supposed to make the other night but didn't)
Monday: Chicken Fajitas (reminds me: I need to take chicken out)

Friday: Taco Dip Supper served with tortilla chips
Saturday: Potluck Family BBQ! (we're doing Frog's BBQ Sauce Chicken and Baby Back Ribs)

Menu Plan Monday - we must eat so I must plan (July 21 - 27, 2013)

Today, I am tired. Like hit by a freight truck tired. It's my RA, I know that, but it certainly doesn't make it any easier. Knowledge is power, but it's not a cure.

I have a half-a&$ menu planned this week. I am extremely thankful my (best in the world) step mom replenished some of my freezer meals. Tonight, we're having chicken pot pie. And bread. Because I have the need to put myself into a carb-induced coma. It was going to be homemade buns, but see above about exhaustion.

Sunday: Birthday BBQ with Friends (they brought everything)
Monday: Chicken Pot Pie (Freezer Meal - thanks, Momma N!)
Tuesday: Pork chops (assuming I can get my tired self to the butcher), more carbs (something high in sodium, from a package because I can't see doing something that would require work)
Wednesday:  Nuggets and fries (go to, 'easy' food)
Thursday: I should probably cook something. Lasagna?
Friday: Nachos
Saturday: Apps for Dinner
Apps: Epicure's Extraordinary Cheese Dip , Easy Hot Wings (Boneless)
served with veggies and assorted crackers *for the Cheese Dip, use the mayo - it makes all the difference from 'good' to 'amazing'!

I think I might try to have a nap. The extra large, caramel corretto didn't wake me up for long.

Menu Plan Monday - June 30 to July 6, 2013

It's hot. I know it sounds like I'm always complaining about the weather - that is because I am. It's too cold here in the winter (and oh, the snow) and the summers are hot and mosquito laden. Hot means bbqing and staying still or splashing in TroubleMaker's pool! I was the person who bought the last two fans at Wal-Mart, TYVM!

Today, I hit bottom with pain and arthritis (really, is it necessary for all my hands, feet, elbows, wrists and even knees, to swell when it's hot and humid? Come on!) so we ended up picking up supper (I could hardly hold a glass in my hand). A few ibuprofen later, and I'm a little more limber and in less pain. I'm not supposed to take anti-inflammatory medications (because of the fusion - it can prohibit the bones from fusing together) but damn it, I needed something today.

Tomorrow will be better - or I'm spending the day in the ice cold pool. (Edit: today was not better. I spent most of the day in the ice cold pool with TroubleMaker - we ended up having baked beans and corn on the cob with the steak. No one ate much steak. It was too hot)

Menu Plan Monday - June 23 to 29, 2013

What a week... It's been a stressful, emotional week - and we're not even impacted by the terrible flooding occurring three  hours south of us! My father was nearly stranded in Okotoks and managed to flee just two hours before the camp he was in was overrun with water. Our dearest friend had also gone MIA during the floods in Calgary - we finally heard from him yesterday. He's en route to here as after he was evacuated, he decided to take a 'holiday' to southern Alberta and south western Saskatchewan - which has now being flooded!

Saw the surgeon - it wasn't what I was hoping to hear :( - and late last night, TroubleMaker came down with a stomach bug and we've spent the past 24 hours tending to a very sick little boy.

There are three tell tale signs when TroubleMaker is seriously sick.

1. He doesn't eat.

So between unexpected, but very welcome, company and a sick child, meals could be kind of hit or miss. I made a batch of homemade chicken soup this afternoon so there will be leftovers for when my little boy feels like eating something and can keep something in his tummy!

Sunday: Chicken Noodle Soup and chicken salad sandwiches (for my honey, who doesn't care for soup)
Monday: Pizza (order in)
Tuesday: Pancakes and bacon
Wednesday: Hamburgers and chips
Thursday: Grilled chicken and pasta salad
Friday: Mom's ham and scalloped potatoes
Saturday: BBQ Steak and Potato Salad

Menu Plan Monday - June 16 to 22, 2013

I'm a Menu Planning Ninja this week! Being the queen of organization (yeah, right) that I am, I was sitting down in my studio with my laptop, the Org Junkie's Menu Plan Monday page open, my binder of recipes (which I've actually expanded to a 3" binder since I first did it), a pencil and some paper all before 9am!

Sunday: Pizza (order in for Father's Day
Monday: Chicken Caesar Wraps (freezer)
Tuesday: Slow Cooker Hamburger Supper
Wednesday: Weeknight Pasta Bake
Thursday: Pancakes and bacon
Friday: Pepperoni Pizza Mac and Cheese
Saturday: BBQ steak and Gramma's Potato Salad (if I'm feeling up to making it)

I see the surgeon for my six week post op check up this week. I have zero idea what to expect - I think I should be much further along in my healing process and I'm disappointed I don't feel a whole lot different than I did before surgery. I expressed to a friend the other day that if I didn't have the scar on my neck, I would think I was still waiting for surgery.

Menu Plan Monday - June 10 to 16, 2013

Thankfully, I planned this menu last week. Plus, because we made an impromptu trip to my Mom's for a few days, I have a few extra meals to tack on to next week!

Monday: Fried Egg Sandwiches
Tuesday: Beef and bean burritos
Wednesday: Penne with meat sauce (FREEZER)
Thursday: Chicken salad sandwiches with salad (FREEZER)
Friday: Sweet and sour meatballs with rice
Saturday: Pot luck BBQ @ my parents (I'm bringing garlic bread (original, I know - it was dictated to me that this was all I was required to bring - I'm also sneaking my last two jars of pickled carrots)
Sunday: Chicken nuggets and fries

Menu Plan Monday - June 3 to 9, 2013

Hello, fellow menu planners! Hope your weekend was great and your menu this week is tasty.

I'm still doing simple meals and eating from the freezer (oh, how I love having a freezer full of premade meals)!

Monday: Fettuccine Alfredo
Tuesday: Chicken Caesar Wraps
Wednesday: Beef and bean burritos
Thursday: Chicken nuggets and fries
Friday: KD and fish sticks
Saturday: Wings, fritters
Sunday: Steak and potato salad (Gramma's of course)

I am trying to work on planning ahead further - like months in advance - because I want to work towards reducing my stress load when I get to go back to work (after my recovery). I'm setting a goal for myself to get until the end of July planned by the end of this week.

Fettuccine Alfredo

I believe I've mastered my sauce. I hope.

3/4 cup margarine
1 tsp minced garlic
3/4 cup blend of 18% cream and 1% milk
1-1/2 cups freshly grated Parmesan cheese
1/4 to 1/2 tsp salt
ground pepper, to taste
1 pkg fresh fettuccine pasta

Melt margarine in a small saucepan. Add minced garlic and simmer 1 minute. Add cream/milk mixture to melted margarine. Stir well and start adding cheese, stirring between additions and ensure cheese is melted before adding more. Add salt (do it to taste, it needs some to enhance the flavour). Continue to stir until pasta is cooked.

Heat large pot of water and salt water once it boils. Add pasta. Cook as directed.

Drain pasta and drizzle with olive oil. Add sauce and toss to coat.

Menu Plan Monday - May 20 - 26, 2013

Another week with Meals from the Freezer. We didn't consume all the meals as planned last week; I wasn't feeling too hot (there is a rumour that I may have been a little too anxious to get back on my feet and over did it just a little bit), so I ate soup and boys, more or less, fended for themselves. I seem to be better this week but I learned my lesson (I say that a lot) so I stop well before I feel tired because tired =  nausea which results in PAIN.

Monday: Burgers and chips (freezer)
Tuesday: Chicken and Mushroom Linguine
Wednesday: Sheperd's Pie (freezer)
Thursday: Fettuccine Alfredo
Friday: White Chicken Enchiladas with Green Chili Sauce  (freezer)
Saturday: Mom's Crockpot Ham and scalloped potatoes
Sunday: Easy (boneless) Hot Wings, veggies and dip

Menu Plan Monday - May 13 - 19, 2013

I kind of fell off the (planning) wagon, but only in bloggity blog land. I've actually got my menu planned through to the beginning of June. Having had surgery a week ago tomorrow, I wanted to be PREPARED. Being prepared, in my world, meant planning a menu and having food in the freezer. I had no idea how long I'd be in the hospital (was told 3 days but with Back Surgery #1 in 2003, I was told three and stayed eight) and I also didn't know what kind of shape I would be in (last surgery, due to complications, I was kind of a mess and after a few days at home, alone, I was shipped off to the (best) step Mom in the world (oh, my Dad was there too)) to recover because I couldn't be 'alone' (because I was a medical mess).

This time, I breezed in and out of the hospital (29.5 hours from the time I checked in until I checked out -  to say I was determined to get the H E double hockey sticks out of the hospital would be an understatement - I would have moved mountains to get OUT of there) and I am doing considerably better than the last time around (not having a staph infection will likely improve anyone's recovery) but knowing I have to put no thought into instructing the world's most awesome husband into preparing meals makes life better.

This week we have a few freezer meals and a few "simple to cook" foods (save for the weekend - it's the first Long Weekend of the summer and I'm living large). I'm also having issues swallowing (a side effect of the operation) so some of my meals will be replaced with soup - namely anything that can't be chewed with my neck brace on.

Monday: Beef Stroganoff with egg noodles (freezer)
Tuesday: Scrambled Eggs & toast
Wednesday: White Chicken Enchilada with Green Chili Sauce  (freezer - enchiladas only)
Thursday: (I forget - side effect of getting old)
Friday: Shepherd's Pie (freezer)
Saturday: (I forget - side effect of neural inhibitors)
Sunday: BBQ Steak and Gramma's Potato Salad

Menu Plan Monday - April 14 - 19, 2013

Hello.. It's been awhile since I've shared a menu - in part because I fell off the (planning) wagon. I've started using the MealBoard app I got for my Ipad and am hoping to plan a month at a time again. Given a few big things that will be happening, I'm actually hoping to plan several months ahead. I also started discussing doing big batch freezer cooking with some friends so I look forward to having some of that to chose from in the coming months.





Sunday: White Chicken Enchiladas with green chili sour cream sauce 
Monday: Veggie burgers
Tuesday: Mongolian Beef with fried rice and stir fried vegetables
Wednesday: Incredibly Easy Chicken and Noodles
