I have done it. I have obtained the "thing" I've been questing to achieve for years.
I perfected my Fettuccine Alfredo recipe. Perfected, I tell you, per-fec-ted! I think the secret was a small clove of garlic minced into the melting butter and tossing the noodles with olive oil before adding the sauce. Nirvana in my mouth. *sigh* Sorry, I've been trying a really long time to get the sauce perfected and I'm so glad I did!
Okay, I'm done raving about my Alfredo sauce so onto this week's menu...
Saturday Order dinner in
Sunday Sloppy Joes with veggies and dip
Monday Minestrone Soup, Soft Breadsticks and leftover pasta
Tuesday Chicken Salad Sandwiches
Wednesday Dash's Donairs
Thursday Schwartzie's Hash Browns and Baby Backy Ribs (slow cooker)
Friday Tortellini with Salmon Ricotta sauce
Minestrone Soup
8 cups water
4 tbsp beef or vegetarian bouillon
14 oz can tomato sauce
1 cup carrots, sliced
1 cup celery, sliced
1/2 cup onion, diced
14oz can kidney beans or three bean chili beans
2 cups green beans
1 cup pasta
1.5 tsp salt
1/2 tsp pepper
1. Saute onions and celery, when tender, add stock, tomatoes and carrots. Simmer about 20 minutes (or until carrots are nearly done). Add beans, return to a boil and cook until green beans are tender.
2. Add pasta, salt and pepper. Cook until pasta is done.
I make a hybrid of this recipe combined with bits and pieces of the copycat Olive Garden's Minestrone Soup recipe.To the above recipe, I add all kinds of veggies (spinach, zucchini, diced tomatoes (canned - reduced the amount of water by the same amount as the can of tomatoes), snap peas). I've also been known to reduce the water and add more tomato sauce as I like it thick and saucy.
Chicken Salad Sandwiches
2 or 3 chicken breasts, seasoned and pan fried
1/4 cup Miracle whip
1/2 red pepper, diced
1-2 green onions, chopped
Dice the chicken (once cooked) and add Miracle whip and diced veggies. Blend well and chill (if desired). Butter bread and add Chicken salad. Yield 6 to 8 generously filled sandwiches.
